Ooh, this post is really overdue! My bad on that one, so life just happened while I started writing this post last year and well, I sort of got carried way. Which is actually a good thing to happen every once in a while.

But as I promised near the end of last year, a pizza that is 100% clean, free of anything unhealthy, full of real nutritional value and THE perfect anytime treat.

Im going to be honest with you, it is a bit of a mission to make but I’d rather choose making my own food any day over buying in a restaurant. Obviously sometimes its really great to just be a lazy sloth and order take outs or get spoilt at a lovely restaurant but for the times you DO have the energy and for the times you happen to be home craving a pizza, this is the recipe for THOSE times.

Well, I’ll get right to it then!  😀

This pizza took me all of 30 minutes to make: prep and cooking time.

The most important part is buying a really nutritious pizza base. I bought the banting pizza base from Spar by Fresh Earth baking brands. It’s made up of almond flour and psyllium husk, high in fibre and protein. You could buy cauliflower bases or even make your own.

This recipe is going according to the banting pizza base but they’re all pretty similar in terms of cooking instructions.

I N G R E D I E N T S :

1 banting pizza base

2 handfuls of grated goats cheese

1 small can of tomato paste

Half punnet of raw sliced mushrooms

Handful of basil leaves

1 Tbsp pesto sauce

Sprinkles of salt and pepper to flavour

R E C I P E :

  • Add the pizza bases to the oven for only 2 minutes so they can bubble up and separate as there are 2 bases stuck together in this packet
  • Take bases out of the oven and peel apart to separate. I would only make one pizza for 2 people. Because its so nutrient dense, its really filling! Then refrigerate the other raw base
  • Smear tomato paste over the base, sprinkle cheese, add mushrooms and add to oven for another 15 minutes. Or until your base is crispy on the edges and the cheese has melted
  • Once removed from the oven, add the basil leaves and pesto sauce to the toppings

Enjoy, because it’s #amazeballs 😉
